Plantain Pancakes

This is probably one of the most basic and simple recipes I've shared on my blog so far but trust me it is worth sharing.

 Alot of people love their pancakes & at the same time alot of people have overripe banana and plantains and never get to actually use them, they tend to just leave it to the side or end up throwing them away.

I love the fact that Plantain is very versatile & you can get to do so much with it, I make this alot at home, its almost our go to breakfast :-)

Ingredients to make 3 pancakes:-

2 eggs
1⁄2 a glass of fresh milk
1⁄2 a teaspoon of cayenne pepper (optional)One tablespoon of vegetable oilAbout 50g of Flour (any type) or 4 to 5 tablespoons1 ripe Plantain
Utensils:-A blenderA non stick frying pan




Method:- Break the eggs and place in the blender, cut the plantain into pieces, add into the blender, add the milk & flour. Blend until thick.
Now heat up the frying pan for 3 minutes and add the oil, pour the mixture into the pan and fry each side until nice and brown (roughly for 3 minutes each side). Jazz it up with some syrup, or fruits :-)
