For all Fish lovers, impress your other half with this amazing easy dish..

Ingredients:-

Tilapia Fish- Can be bought from any Fishmonger or store

For the marinade you'll need:-

2 teaspoon of all purpose seasoning
1 teaspoon of salt to taste
2 tablespoons of barbecue jerk seasoning
1 tablespoons of Fish seasoning
1 stock cube
1 tablespoon of thyme
1 tablespoon of dry pepper
20ml of vegetable or olive oil
Half a glass of water

For Saiprojects Homemade sauce:-
3 cloves of garlic
2 big ginger
1 big scotch bonnet( quite spicy)
2 big red onions
50ml of vegetable oil
1 teaspoon of all purpose seasoning
a pinch of salt to taste

Method:-

To Marinate the fish, add all the seasonings together, mix well and make 2 lines on the fish for easy seasoning penetration.
Cover with a cling film and set in a fridge for an hour.

Preheat your oven to 180 degrees, Glaze a grill pan with some oil and place the fish on the pan, place in the grill and turn each side after 10minutes to che k cooking progress.

Leave the fish uncovered for it to be able to cook well and on time.

Leave to cook for 45 minutes in total or until properly cooked.

For the sauce:-

Preheat the oil for 5 minutes on medium heat, blend the ginger, garlic,onion and scotch bonnet very roughly. Make sure it's not smooth as you'll miss the consistency you need.
Fry this for 20 minutes until properly fried.

Serve the above with Chips, Sweet potato fries, plantain or anything of your choice.

Hey Foodies, here's another way to enjoy your toast in the morning..

So easy yet super tasty. Enjoy..xx

Ingredients:-

1 egg
a bit of chopped onion
a bit of chopped tomatoes
a tiny bit of scotch bonnet pepper or black pepper- whichever you prefer
2 slices of bread
a bit of butter
salt & stock cube to taste


Method:-

Heat up a frying pan on medium heat at least 5 minutes prior to frying, add some butter by distributing evenly.

Place a slice bread on the pan & leave to fry for a minute or so; whilst that's frying, crack the egg and add the tomatoes, onions, pepper & seasonings, beat together and place half of the egg mix on the 1st half of the bread.

Now place the 2nd bread and add the remaining egg mix, leave both sides to fry until done..

Voila, there you have it..

Super easy, super tasty & goes very well with a cuppa!!!!

Hey Foodies,

So this video was shot last year Christmas 2014; I had friends and family round and I made this amzing 8.2kg Christmas Turkey.

Ingredients used below:-

Jamaican Jerk Seasoning
Salt
Suya Pepper
All Purpose Seasoning
Thyme
Curry Powder
Stock Cubes- 10

And for the stuffing I used-

Onions
Garlic
Ginger
Mixed red, green, yellow pepper

I also added water...

I added all the ingredients and poked the turkey to make holes so that the season can penetrate in the turkey. I then left this to marinade overnight until Christmas day where I slow cooked it in the oven for at least 7 to 12 hours for that moist, succulent flavour lol.

Hey Foodies, I haven't gone awol, I have just been busy being busy..

Mummy life is very hands on and extremely knackering but at the same time it is very amazing and by the time you know it, the day is over and the next day starts and so on and so on & the year is over.... whew!!!

Now back to Food...So I made this dish the other day and thought to share with you all, It is Fried Yam Chips & Plantain with Scrambled eggs & sauce sounds alot right??
Well you need at least a jog round the block after eating this.
