CAULIFLOWER RICE RECIPE- BEST RICE ALTERNATIVE

Ingredients:-
Serves 2-4
- ½
a red onion- chopped
- 1
Fresh Cauliflower
- 1
small sweet pepper (yellow/red or green)
- Any
all-purpose seasoning of your choice
- A
handful of chicken breast strips
- A
handful of cooked king prawns- (optional)
- 1
teaspoon scotch bonnet pepper, chopped finely (omit if you don’t want the
dish spicy)
- 1-2
tablespoons coconut oil spray
- salt
and pepper to taste
Blend the cauliflower in a food processor until it's almost like couscous texture and place aside. Now add the onions, scotch bonnet and peppers and mix well. Add the salt, seasonings and leave to simmer on low heat for about 3 minutes. Now add the chicken & prawns to also simmer for another 2 minutes.
Now add the cauliflower in bit by bit, add the soy sauce and fold in gently, cover to simmer for 2-5 minutes and that's it... voilaaaaa Enjoy your perfectly done Cauliflower rice..
